This is a quick and easy cheese soufflé recipe, and all the credit for introducing it to the family goes to my aunt Naseema Kapadia. No birthday celebration is complete without her famous cheese soufflé

 

Ingredients

Cheddar Cheese                     one small packet or about 300 grams

Eggs                                      4

Milk                                       2 Cups

Bread                                    4 slices (you can use white or brown bread)

Black Pepper                         ½ teaspoon

Mustard sauce                       ½ teaspoon

Butter                                    1 teaspoon

 

Method

  1. Combine all the above ingredients in a Food Blender and blend. Make sure the mixture is not too runny, otherwise add more bread slices to thicken it slightly.

2. Pour into a Pyrex dish

3. Remove the edges of 4 or 5 Bread slices and butter on both sides. Cut into two triangles and line the pyrex dish (check video for full method)

4. Bake in a pre-heated oven at medium heat for 25 to 35 minutes.

5. Poke a butter knife into the soufflé to check if its done. The knife should not come out completely clean since the soufflé will set further as it cools.

You can also add mushrooms, chicken, chopped sausages or corn to the soufflé mixture before pouring it into the baking dish. You can also experiment with herbs like parsley or tarragon to add extra flavour.
