This hearty & tasty spinach soup will warm up the chill evenings. It comes again courtesy the lovely Maha Rehman, a hostess who surely knows how to keep her guests happy. And this simple, yet delicious Spinach soup recipe will ensure your family stays happy and well-fed too.

You will need:

2 tbsp Olive Oil

10 ounces Fresh Spinach

2 Cloves of Garlic (ground into a paste)

1 medium Onion (chopped)

½ stick of Butter (about 4 tbsp)

¼ cup Flour

3 cup Milk

2 tsp Salt (or add to taste)

Ground Black Pepper (to taste)

Method: In a large pan, heat the olive oil on medium heat. Now add spinach and garlic and cook for 2-3 minutes, until the spinach wilts. Now add this mixture into a blender with ¼ cup of water and blend into a paste.

Now in large pan, add butter and onions and cook until soft on medium heat. Now add the flour, bit by bit, stirring the whole time. After 2 min, add the milk and keep stirring it.  Add salt and black pepper according to taste and cook a bit longer, stirring constantly. Now add the spinach paste and cook 3-5 min or until the soup thickens. Now taste the soup and add additional salt or pepper as required.

Serve the spinach soup warm with some toasted garlic bread or bread sticks and just wait for the compliments to flood in!
